Ginger & Bourbon Toddy
Makes enough ginger tea for 6-8 drinks; recipe is for 1 drink

Ingredients
For the ginger tea:
2 oz (60 grams) fresh ginger, peeled and thinly sliced
2 cups water

For the cocktail:
1 1/2 oz honey bourbon*
1 dash bitters
1 lemon peel (for garnish)

Directions
For the ginger tea:
In a small saucepan, heat two cups of water to boiling. Add the ginger slices, lower the heat to simmering, and simmer for ten minutes.

Strain the ginger tea through a coffee filter or cheesecloth-lined strainer into a 2-cup measure.

To assemble the cocktail:
For each drink, add 2 ounces of ginger tea, 1 1/2 ounces honey bourbon, and a dash of bitters to a heat-proof glass. Stir to combine and garnish with a lemon peel.

* Substitute 1 ounce of regular bourbon and 1/2 ounce of honey if you prefer.

I am distracted with making travel journals. I am also planting my garden. I do have a ginger recipe rattling around in my mind.
:hyper: I need to take a deep breath and focus.
