Ginger Liqueur
Makes about 2 cups

Ingredients
2 oz ginger root, peeled and sliced thin
1 vanilla bean, split
1 cup sugar
1 1/2 cups water
Zest of 1 orange
1 1/2 cups brandy (I used St. Remy)

Directions
Place ginger, vanilla, sugar, and water in a medium saucepan and bring to the boil. Cut the heat back to a gentle simmer and let it go, uncovered, for about 20 minutes. Set aside to cool.

Place the orange zest, cooled ginger syrup, and brandy in a sealable glass jar (I used a Ball jar with a flip lid). Seal and shake, then set aside to steep for 24 hours.

The following day, remove the vanilla bean and set aside for another day.

The following day, strain the liquid through a coffee filter or cheesecloth into a bottle or jar for storage. Let it sit for one more day to mellow the flavors.

This should keep, unrefrigerated, for up to a year. Drink on its own as a cordial, or use it in other cocktail recipes where a kick of ginger would be appropriate. Compared to Domaine de Canton.
