I've tried lots of gluten and dairy-free (not egg-free) cupcake recipes and found this one from All Recipes works best even though it is not a GF recipe. Just replace flour with GF SR flour, add GF baking powder, and use dairy-free 'margarine'. I only make half the quantity of buttercream. We still find it a bit too sugary so I will work on it (What a shame! I'll have to make more cakes to 'experiment'!)
I have a vegan/GF recipe I must share sometime too.
