Gluten free puff pastry

I just came accross an alternative way to make puff pastry that seems pretty straight forward.
It's in Dutch though.
I don't know if there is a way to translate or subtitle it?

I think he just slathers it with butter, puts it through the pastry laminator, then rests it overnight. I suppose he does this several times to ensure maximum buttery goodness!

Dough 1
75 g butter
100 g flour
Bit of salt


Dough. 2
250 g flour
100 ml cold water
1 egg
Salt


Filling
Sunflower oil for frying
3 shallots
3 cm ginger
3 tl baba’s curry powder (Malay curry powder)
1 star anise
1 cinnamon stick
2 tl black peppper
2 tl fennel seed
500 g bildtstar potatoes
100 g dried salted anchovies (Ikan Bilis)
Half bunch cilantro
3 spring onions
1 à 2 birds eye chili
Salt to taste
Neutrale oil for deep frying
