@morning glory, I made it! Really fresh and tasty. It is sitting in a jar in the fridge (it lasts up to 7 days according to the recipe).

Ingredients
2 cups mint leaves
½ brown onion
½ cooking apple, cubed
1 Tbs cider vinegar with 1 tsp honey
⅓ tsp salt
¼ tsp garam masala (Mridula Baljekar's recipe)
Method
Process all ingredients in a mixer or food processor until the mixture reaches a fine consistency. Pour into sealed glass jar or container and refrigerate.
