GREEN SALAD WITH GREEK YOGURT VINAIGRETTE
Makes 8-10 servings
Salad Ingredients
2 romaine lettuce hearts, stemmed and cut into 1/2-inch pieces
1 iceberg lettuce head, cored and cut into 1-inch pieces
3 celery stalks, cut into 1/4-inch pieces
3/4 cup crumbled feta cheese
1 pint fresh strawberries, sliced
1 cup walnuts, toasted and chopped
Dressing Ingredients
1/4 cup plain Greek-style yogurt
1/4 cup balsamic vinegar
2 TB olive oil
1 TB Dijon mustard
1 TB honey
Salt and black pepper to taste
Directions
Combine romaine and iceberg lettuces with celery in a large bowl. Sprinkle with feta, strawberries, and walnuts.
Combine all dressing ingredients in a bowl or jar with lid and whisk or shake until smooth. Taste and adjust seasonings. Pour dressing over salad and toss gently to evenly coat.

NOTES: I did not include all the brand names the recipe listed. Also, I used fresh mozzarella instead of feta and slivered almonds instead if walnuts, because that's what I had on hand (and would prefer, anyway).
