Home made mayonnaise discussions

I don't find there's any difference TBH. If I want a bit of pep I add a little EVOO to the mayo at the end of the process unless I'm making an EVOO-specific mayo like aioli or allioli - the flavour profile of EV olive oil is just too strong for everyday mayo I find.

I agree with that. Its unusual to find any chef who uses olive oil as the main oil in mayonnaise. Mayonnaise uses copious amounts of oil ( hence its copious calories!) whereas a simple vinaigrette uses only a small amount, so the bitter taste a good thing.
 
I guess I'm kind of picky with my olive oils. I have found one that is probably the best I've ever had (that isn't saying much, though). I find that most of them have too much of that "flowery" taste to them, or a similar unattractive taste about them. The one I use is the least offensive of those I could find so far.

I don't use EVOO for mayonnaise either. I pretty much only make mayonnaise when my tomatoes are coming in fresh from the garden to make sandwiches or pies. 🤤

Also depends on why you use it and what it's used for. Choosing the right olive oil (or any oil) type for your needs and likes is important as they give different results.

There are 2 main types of olive oil and 2 ways each is produced which affects a number of qualities. 1) Hot and cold pressed 2) first pressing (extra virgin) and 2nd or later pressing.

Exactly.
I ❤️ olive oil and use EVOO for most but not all of my cooking. I buy the least expensive in the largest size I can find as almost all are blends from the top olive oil producing regions and they're all good IMO.

I buy the ones in the middle. Most of all I ever do with it is make a vinaigrette or drizzle liberally over whatever.
