Recipe Honey Oats and Eggs Prosciutto Breakfast Rolls

Honey Oats and Eggs Prosciutto Breakfast Rolls:

Ingredients:

1) Eggs - 2
2) Serrano pepper - 1
3) Scallion - 1
4) Prosciutto - 8 to 10 slices
5) Oats, rolled - 1/8 to 1/4 cup
6) Honey - 4 to 6 tblspns.
7) Cinnamon - 1 tspn.


Procedure:

1) Dice up the Serrano pepper and scallion.
2) Scramble the diced pepper and scallion with the eggs.
3) Mix the oats, honey and cinnamon.
4) Cook the scrambled eggs.
5) Layout two overlapping strips of prosciutto.

NOTE: Prosciutto slices are delicate, especially in areas of fat and it is best to overlap two strips to keep things well structured.

6) Crumble over the prosciutto with the honey and oats.
7) Cover again with scrambled eggs.
8) Roll up the prosciutto into a firm roll.
9) Repeat steps 5 through 8 for as many rolls as desired.
10) Place the rolls on a serving dish.

NOTE: Do not bake or fry the rolls or they will lose their solidity and fall apart. Serve cold with only the scrambled eggs being hot or warm.

11) Serve.
