How do I cook rice with leftover meat

I have some leftover roast shoulder of goat from Christmas. Thinking to shred it off the bone and mix it with rice but not sure the best way to do it. Thinking of frying some leeks and then cooking the rice all in one pot and then adding the meat. Do I add the meat once the rice is cooked? Any advice on the best way to do it?
 
I agree with CookieMonster. I would keep them separate since the roast is already cooked.

Edited to add: I would probably use some of the broth off the roast for the rice.

You can reuse leftover meat in many ways, mix it with rice is a good one. Someone makes also a whole risotto by using leftover meat.
Or what do you think to make croquettes or mini frittatas combining both rice and leftover meat?
