Mountain Cat as you probably peel a lot of quail's eggs you really must try this if you don't know the technique already.

Here are some quail's egg salads I made:

eggs coloured with red cabbage water. The longer you steep them the more purple they become.

You can also simply fry them, soft boil them etc.

I recently served one on toasted cheese with your Chilli Sauce - I'll post that separately.
