Insalata Capricciosa on Sour Dough

Home grown baby carrots, celeriac and artichoke salad on toasted sourdough. Served as a starter.

  • Raw baby carrot washed rand cut into fine Julianne strips
  • Celeriac peeled and cut in the same way
  • Preserved artichoke cut into small strips
  • Lemon juice
  • Mayonnaise
  • Salt and Pepper
  • Sour Dough Slices
Assemble all the cut vegetables in a bowl, and sprinkle with lemon juice. Add the mayonnaise to the vegetables and mix thoroughly. Season to taste. Toast the sour dough and top with vegetable mixture. Serve and dress with good quality olive oil. 😋😋😋

Celeriac remoulade is a French classic and there is some similarity here. The addition of carrots and artichokes adds a significant twist. An Italian version! Nice...
