This has a wonderfully fresh taste. I've put it in the Free From thread because I used coconut yoghurt and it worked very well. Cheap, easy, instant, dairy free ice cream that does not taste, cheap, easy or dairy free!
It also doesn't need any extra sugar (there's a small amount from the slice of gingerbread and the mango does the rest of the work). If you don't like the hint of ginger this has then speculoos are a suggested alternative.
INSTANT MANGO ICE CREAM
300g frozen mango
125g creamy yoghurt
1 slice gingerbread
Allow the mangoes to defrost just enough to cut the pieces in two (widthwise).
They suggest you can also use frozen strawberries, peaches, melon, etc.

125g creamy yoghurt
1 slice gingerbread
Allow the mangoes to defrost just enough to cut the pieces in two (widthwise).
- Put the gingerbread in the main processor bowl with the main blade and blend for 30 seconds.
- Add the yoghurt and mango. Blend for 30 seconds. Scrape the mixture off the bowl walls with the spatula. Blend for a further 30 seconds.
- Eat immediately.
