Before I start, everything is put away.
Then I think what I'm going to need to make the dish. That's when the (apparent) chaos begins. All the ingredients on the kitchen top: today, that was cooked beetroot, carrots, raisins,honey, almonds, cashew nuts, mint, parsley, coriander leaf, onion, garlic, olives, lemon, tomato paste, olive oil, and spices (cloves, cardamom, cinnamon, nutmeg, caraway, black pepper, fennel, paprika and cumin).The only thing still in the fridge was the chicken.
First move- boil water in the kettle. Take out the si cooked pice grinder and grind all the spices. (Spice grinder stored- spices in a small dish). Chicken out, cleaned, rubbed with spices, salted, back into the fridge to marinate. Beetroot cut into batons while I cooked the carrots. Raisins and spices added, along with honey and lemon juice. Carrots sliced, added to beetroot, fresh mint added, salt, taste, more salt, bit more lemon, done. Set aside. Excess ingredients back in the fridge.
Large frying pan on the stove. Chopped onions and garlic, into the pan with olive oil. Sauteed, tomato paste added, blended with a bit of stock. Tomato paste back in the fridge. More olive oil in the pan; spiced chicken gently fried and set aside in a bowl.( overcooked chicken is rubbery). Blended onion mix into the pan and heated. Olives, coriander and lemon slices added. All dirty dishes in the sink. Taste, taste, adjust seasoning, add chicken, more dirty dishes in the sink. Chicken gently simmering, so wash everything in the sink.
All that was left was to chop the cashew nuts for garnish.
That's how I work. Clean, chaos, cleaning up along the way, then spotless again!
