Sharp knife..less clean up..
I just use my knife. Cabbage, for some reason, is very pleasant to cut through. Just the right amount of resistance and crunch.
If I were to use my mandolin, I’d have to cut the cabbage into manageable pieces anyway, so I just stick with the knife.

At home I've used a mandoline, a box crater and a knife and at work I've use these three plus used the robot coup with attachments. Generally it falls to the application and volume I'm tasked with.
Chef´s knife. I did some in the processor once, but it was way to small , although I might just do that if I had to make cabbage for 20-30 people!
You mean the pieces of shredded cabbage were short in length?
Short, and too thin.

I once tried to chop cabbage with a mandolin but ended up cutting the tip off my little finger, since then I've always used a sharp knife.
