Ms. Mofet’s Chocolate Cookies W/ Macadamia Nuts & White Chocolate Chips

Yield ≈ 96 (Used 1 TBSP. Scoop/Disher)

3/4 C. firmly packed brown sugar
1/2 C. sugar
1 C. butter (2 sticks), softened (may use 1/2 ea. butter and butter flavor shortening or all butter flavor shortening)
1 tsp. Vanilla (or almond) extract or vanilla paste
1 egg
2 C. all-purpose flour
1/2 C. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 C. white chocolate pieces or vanilla milk chips or 6 oz. white chocolate baking bar (cut into 1/2" chunks)
1 (3 1/2 oz.) unsalted macadamia nuts, coarsely chopped

DIRECTIONS

Heat oven to 375°F.

In a large bowl combine brown sugar, sugar, butter, (and/or shortening); beat until light and fluffy.

Add extract and egg, and blend well.

In a small bowl combine flour, cocoa, baking soda, and salt.

Add dry ingredients into the large bowl with the sugar, butter, and egg mixture and mix well.

Stir in white chocolate and nuts.

Drop dough by rounded tablespoon 2 in. apart onto parchment lined or ungreased cookie sheets.

Bake for 5 minutes then rotate pans and switch shelves, bake 5 more min. or until set.

Cool 1 minute, and remove from the cookie sheets to rack.

Yes. When baking for Christmas I haul out my kitchaid once. Last time I made cookies I did like 10 different kinds. Packaged each into zip lock bags, flatened the dough and into freezer. You can break down into several bags. Or half the recipe. But will be difficult to half an egg.

Feel you on the KA. Mine is at least 30 years old and probably weighs that much! I'll mix the whole lot and portion out for bake size batches. I'll do that pretty quick here after I get some "spring has sprung" yard work out of the way.
