Recipe & Video Mulled wine poached pears with mojito macerated strawberries

Recipe:

PEARS:
2 pears
1/2 bottle of red wine (you can cook as many pears in this as needed)
1 tsp ground ginger
1 tsp ground cinnamon
1 star anise
2 cardamom pods
1/2 tsp grated nutmeg
3 tbsp honey

MOJITO STRAWBERRIES:
8 strawberries
2 tsp sugar
2 mint leaves
1 shot of white rum

DECORATION:
a few raspberries
1 orange
1 strawberry
chocolate decoration (optional)

Method:

1. Peel and core pears.
2. Bring all other pear ingredients to a simmer.
3. Add pears to liquid, cover and cook until soft. About 20 - 30 minutes
4. While pears are poaching, dice strawberry, shred mint leaves and mix with sugar and rum
5. Remove pears, strain liquid and reduce until syrupy.
6. Arrange pears on plate, spoon over wine syrup
7. Decorate with remaining fruit.

Can be served hot, warm or cold. Enjoy!
 
This looks delicious and so pretty! How did you make the chocolate spiral?

Its an age since I poached pears in red wine. I'd go as far as saying it may be 40 years ago :ohmy: so maybe its time to try this classic way to cook pears again. Perhaps I'll do something with pistachio for the current recipe challenge.
 
Just spread some melted chocolate onto baking paper, run a comb (or what i used is called a serrated bench scraper) over it, loosely roll it up and stick it in the freezer for 10 minutes! Easy.
