Mushroom Chicken and Egg Breakfast Soft Tacos:

Ingredients:

1) Eggs - 3
2) Mushrooms, crimini brown - 6 to 8
3) Chicken half breast - 1
4) Jalapeno pepper - 1
5) Onion - 1 slice
6) Tomato, Roma - 1/2
7) Salsa - 3 tblspns.
8) Cilantro - 3 tspns.
9) Cheese, shredded blend - as desired.
10) Soft Tacos - 4


Procedure:

-- Preparation --

1) Slice the mushrooms, top to bottom.
2) Julienne cut the Jalapeno pepper.
3) Quarter 2 slices of onion.
4) Dice up the tomato.
5) Slice up the chicken half breast into approximately 1/2" pieces.
6) Scramble the eggs.

-- Cook and Serve --

7) Pan fry the chicken pieces and set aside.
8) Cook the scrambled eggs and set aside.
9) Combine and cook the mushrooms, chicken, pepper, onion and tomato.
10) Mix in the cilantro.
11) Open the soft tacos to allow filling them.
12) Spread the tacos inside with salsa.
13) Spoon in scrambled eggs to half fill the soft tacos.
14) Layer in the chicken pieces.
15) Spoon in the cooked vegetables.
16) Fill in each soft taco with shredded cheese blend.
17) Serve.
