My Quick Cucumber Kim Chee (Kimchi)

Serves 2-3


Ingredients:

1 Hot House Cucumber, diced (I use Hot House aka English, so I don't have to peel it)
+/- 1 Tbsp. Sea Salt (I use Hawaiian Sea Salt I bring back)
+/- 1-2 Tbsp. Noh brand Kim Chee Mix


Method:

This really is an "eye ball it" kind of recipe.

Place the diced Cucumber into a strainer over a bowl - I use my Salad Spinner for this
Sprinkle the Sea Salt over the Cuc, being sure that all pieces have some Salt on them, stirring may be necessary
Leave the Cuc + Salt mixture to sit for 15 minutes
Rinse off all of the Salt and drain well, this is where the Salad Spinner comes in handy
Place the now slightly softened-less watery Cucumber chunks into a bowl (I use the bowl of that Salad Spinner, no need to wash it out yet)
Sprinkle the Noh Kim Chee Mix over the top, as much as you think you can handle heat wise (Pro tip: hold your breath while doing this step, that Chili Powder can be wicked)
Give everything a good stir to ensure that all is distributed evenly
Cover and refrigerate for at least 2 hours, all day is better (once again, the Salad Spinner lid works great here)

This makes a lovely side dish

It's very nice with grilled meats or fish, along with some steamed White Rice.

Nice.
I like the salad spinner for removing the excess water from the cucumber.
I can’t find gluten free kimchi mix but I have gluten free gochujang so I’ll sub it with that👍
