Napa cabbage, also called Chinese cabbage, is a veggie related to bok choy. In fact they are different sub-species of the same species and often used in Chinese stir fry dishes. The Napa cabbage is a little less crunchy than bok choy and makes a good base for making a cole slaw which I have described here.

Ingredients

1 head napa cabbage
2 tbsp sugar
3 tbsp olive oil
2 tbsp rice vinegar or other vinegar of your choice
1 tsp grated ginger
1/4 cup sour cream
1/2 cup mayonnaise
salt and pepper to taste

Directions

Slice the cabbage from tip to as near the stem as you like in 1/4" cuts. In a large bowl add everything and mix thoroughly. It is that simple. If you want to make the slaw a little more Asian, you can substitute soy sauce for the salt and perhaps throw in a little sesame oil and even leave out the sugar. You may also want to adjust the mayo and sour cream to your taste. Try it. It is a big increase in flavor over the slaws normally served in restaurants.
 
I'm just a Chili head and I like spices like ground coriander, Cumin, cardamom... to make things short everything in a Garam masala
