New twist fish wrapped with bacon

As I was in the kitchen yesterday I was thinking of what to do with the Tilipia fish fillets I thawed out. I had some extra bacon and this is what I came up with. In a baking dish I placed my fish, then I placed bacon
all on top in two rows, vertically and horizontally. Wow, the outcome was great. Wasn't expecting it to turn out so well. I baked it slow for 35 minutes. Then the last few minutes I turned the heat up for a little crisper effect. I will definitely do this again.
 
Ts5757, you must be new here. A big warm welcome. I am a tilapia lover and when I have it on hand I cook it almost every day. I am always looking for new ways to prepare it and this sounds quite easy and delicious. That's the thing with tilipia, it's a quick fish to work with. Thanks for this recipe and welcome again.

One last thing. Is this your own creation? And the twist and wrap in the name all your own doing?

I've made similar dishes before although not with tilapia which is less common here. Fish definitely works well with ham or bacon. Its that salty sweet combination. You do have to be careful not to use too much bacon as it can overpower the fish. But a relatively bland fish like Tilapia benefits from and needs robust tastes. Tilapia will also work well with a salsa. Another fish/ham combination is monkfish wrapped in parma ham then baked. Truly delicious.
 
Sounds really good. Everything is better with bacon. :) I have never thought of doing this before but I will definitely give it a try. I had had it with salsa before and it was a nice combination.
 
Oh yummy...It would be really low carb too. Another fish that would work well with would be Swai, very similar to Tilapia...but usually ends up being a bit cheaper since it is not as well known. I have Cod right now not sure how that would be.

Cod would work OK with the bacon wrap.

Thanks for the nice welcome. I don't know if anyone has this certain recipe or not. Just something I whipped up on a tight budget.

A tight budget would not get you far with that dish around here. Both Tilapia and bacon are pricey in these parts. I might have held off of Tilapia though, because of the bad press it's been getting. I have read time and time again that it is not as healthy as we once believed. Still every time it is mentioned I want to run out and get some. I really do like it even if they say it's worse than bacon when it comes to fat content.

Tilapia isn't a fish that is really seen in UK meals, but fish wrapped in bacon is a very common item seen on restaurant menus. I have seen sea bass cod and halibut wrapped in bacon on different places. Some shellfish, such as scallops, also work well with bacon because of the salty flavour.
 
I still prefer a Serrano or Parma ham instead of bacon as it cooks quicker than bacon so fish does not over cook ,but smoked bacon gives extra taste

I've been experimenting lately with smoked bacon used in ballotines (rather than Parma ham or Serrano). I've found that if you put slices of streaky between two sheets of clingfilm, you can roll it quite thin with a rolling pin. So, the 'wrap' is more like a thin parma/serrano ham and thus cooks more quickly.
 
It's never occurred to me to cook or wrap my fish with bacon, but I don't know why, because I do love bacon. Perhaps it's because I tend to cook fish more during Lent than any other time, and of course adding bacon or other meat during that time defeats the purpose :wink:. This would actually be a really good way to transition out of Lent, so I'll have to keep it in mind. I love bacon wrapped scallops as mentioned by @Liam Brown, but scallops aren't as common here as they are back home. If I stumble across some, I'll have to wrap them in bacon, because it's been way too long!
 
I don't like bacon as well,I prefer bacon wrapped scallops which you can find in most motels and restaurants cooked with fish around my home town.
