As I was in the kitchen yesterday I was thinking of what to do with the Tilipia fish fillets I thawed out. I had some extra bacon and this is what I came up with. In a baking dish I placed my fish, then I placed bacon
all on top in two rows, vertically and horizontally. Wow, the outcome was great. Wasn't expecting it to turn out so well. I baked it slow for 35 minutes. Then the last few minutes I turned the heat up for a little crisper effect. I will definitely do this again.

I have never thought of doing this before but I will definitely give it a try. I had had it with salsa before and it was a nice combination.
. This would actually be a really good way to transition out of Lent, so I'll have to keep it in mind. I love bacon wrapped scallops as mentioned by
