Recipe Onion and Garlic Breakfast Quesadillas

Onion and Garlic Breakfast Quesadillas:

Ingredients:

1) Eggs - 3
2) Bacon - 4 Slices
3) Garlic - 1/8 to 1/4 Cup
4) Onion - 1/4 to 1/2 Cup
5) Sun Dried Tomatoes (Julienne Cut) - 1/4 Cup
6) Sun Dried Tomato Oil - as required
7) Spinach (Baby) - 1/4 to 1/2 Cup
8) Half N Half - 1/8 Cup
9) Wheat Tortillas - 2 Large
10) Shredded Cheese (Colby-Jack) - 1 Cup


Procedure:

1) Dice Onion and Garlic and place in a small mixing bowl.
2) Chop up Spinach and add 3/4 of it to the mixing bowl.
3) Add Sun Dried Tomato to the mixing Bowl.
4) Pan fry the Bacon Strips, chop them up and add to mixing bowl.
5) Use a spoon to mix up the contents of the mixing bowl. Set aside.
6) Crack and add Eggs to a separate mixing bowl.
7) Add Half N Half.
8) Add the remaining 1/4 of the chopped Spinach.
9) Stir and then whisk the Eggs to a light froth.
10) Add Sun Dried Tomato Oil to the frying pan and pre-heat.
11) Pour the Egg mix into the pan and cover while frying.

NOTE: Ensure that the Eggs fry thoroughly and do not turn over.

12) Lay a Tortilla on a serving plate.
13) Cut 1/2 section of the fried Egg and spatula it onto the Tortilla.

NOTE: Cover one half the Tortilla, matching up rounded edges of the egg with the rounded edge of the Tortilla.

14) Cover the Egg on the Tortilla half with the chopped ingredients.
15) Cover the chopped ingredients with shredded Cheese.
16) Fold over the Tortilla.

NOTE: Fold over the half of the Tortilla with nothing covering it onto the side that is covered with Egg and other ingredients.

17) Cut the Quesadilla in half and arrange the halves on the plate.
18) Microwave for 2 minutes to melt the Cheese.

NOTE: Repeat steps 12 through 18 for a 2nd Quesadilla.

19) Serve.


Ingredients will make 2 Quesadillas.
 
I like the idea of the spinach, cheese and bacon here with sun-dried tomatoes. That's a nice combination. Just to be clear - the chopped onion and garlic and 3/4 of he spinach are not cooked other than in the microwave for 3 minutes? Sorry if I'm misreading the recipe.

You are correct. The ingredients will therefore be fresh and crunchy to some extent. It would be not so well, if they were pre-cooked in this case.
