Our Next Biggy, July 4th!

I am making Iowa pork tenderloin sandwiches for dinner tonight, not for the 4th, not for any particular reason other than I have a section of pork tenderloin in the refrigerator that needs to be cooked, and we haven't done it in awhile. It's classic Iowa State Fair food.

Yeah, I live in Ohio, which is not very close to Iowa, LOL, but we met some people in Mexico several years back who were from Iowa and they told us about it. Very nice people, left-leaning and not Trump supporters, which is rather unusual for Midwesterners.
 
Well done for making it. I would have 'liked' it but in truth I don't understand macaroni salad at all.
It’s a cookout staple here, with loads of variations. This one is like most of the stuff I’ve been cooking lately - you can recognize it for what it claims to be, but it won’t be your favorite version of it.

Onto the beans, and the same comment applies:

As you can see, no real sauce there, because sauce is where the fat devil lives. There are chunks of apricot in there, something I’d normally never do.
