Recipe

Pandan Jelly

6-8 pandan leaves roughly chopped
600ml water
3/4 cup sugar
3 tsp agar agar powder

Process leaves in 300mls water until water starts turning green.
Strain mixture in to a saucepan, thoroughly squeezing as much moisture out of leaves as possible.
Add remaining water, sugar, and agar agar,
Stir thoroughly and bring mixture to boil, then simmer.
Make sure sugar/agar agar completely dissolved.
Leave mixture on a very low hotplate, just enough so it doesn't cool to room temp.

Coconut Jelly

600mls coconut milk
3/4 cup sugar
3 tsp agar agar powder

Stir sugar and agar agar in to milk in a saucepan.
Bring to boil, then simmer till sugar/agar agar completely dissolved.
Keep mixture warm as per pandan mixture.

Take a rectangular container (mine was about 20cm x 10cm x 5cm) and line with cling film
Pour in 3/4 cup of warm coconut mixture, and leave till starts to set.
Is important not to let fully set, just firm on top, otherwise next layer won't stick.
Once semi set, repeat step with 3/4 cup of warm pandan mixture.
Continue till all mixture used....I got three layers of each.
It will keep setting on bench, but to speed things up put in fridge 1-2 hours.
Slice and serve.

Looks great, have you thought to pair it with some kind of sauce, like salted caramel sauce? I've eaten a Vietnamese dessert with various jelly cubes once, all made with tapioca and different kinds of juices, they served it in a sweetened sauce based on coconut milk, it was way better than I thought it would be like.
