Timur (timbur) is a Nepalese spice which is similar to Sichuan pepper (the same family). The dried berries have a floral, grapefruit citrus taste and a slightly numbing effect in the mouth. This simple dish uses only three main ingredients plus the chicken. Eat it hot or chilled as part of a salad.

4 tbsp Greek style yoghurt
2 tsp timur berries (or Sichuan pepper)
1 tbsp paprika
1 tsp salt
2 chicken breast fillets

Method
- Roughly crush the timur berries. Mix the yoghurt, crushed timur and paprika together in a bowl large enough to contain the chicken breasts.
- Add the chicken breasts to the bowl, turning to coat thoroughly. Cover and marinate for at least 2 hrs.
- Heat grill (broiler) to high.
- Place the chicken breasts in an oven proof dish. Grill (broil) for approximately 25 minutes until charred in places (add another 5 minutes for larger pieces of chicken).
