I made this for guests last night and it was delicious. I've not made a cobbler (sweet or savoury) since I left my parents' home over 30 years ago.I find gluten free pastry really difficult so usually make a fruit crumble but mentions of cobbler on Cookingbites made me give this a go.
Ingredients
1kg fruit (I used approx 2/3 plumbs)
100g sugar
300g GF SR flour
150g vegan 'butter'
150g golden-brown sugar
3 eggs (whipped a little)
1tsp nutmeg
Method
Chop fruit and add to 1.5 litre dish
Sprinkle sugar on top
Mix flour, nutmeg and sugar and rub in fat.
Mix in egg.
Pour 'batter' to cover the fruit.
Bake at 180 for 30 mins.
