This recipe is an old favourite, prawn cocktail. The best one I have ever had was in Thailand, a big cocktail glass was filled with shredded white cabbage, the sauce was quite dark and tangy, and the prawns sitting on the side of the glass were the biggest I have ever seen. Not the most original recipe but by far the best I have ever had. This pic isn't the best but I didn't take any in the restaurant.
Ingredients (serves 2)
8 or 12 cooked tiger prawns depending on size)
50g Chinese cabbage or iceberg lettuce, finely shredded
3 tbsp mayonnaise
1 tsp fish sauce
Juice of 1/2 a lime
1/2 tsp of hot chilli powder or Tabasco
1 tsp sweet chilli sauce
Chopped basil or coriander, to garnish.
Method
Ingredients (serves 2)

50g Chinese cabbage or iceberg lettuce, finely shredded

1 tsp fish sauce
Juice of 1/2 a lime
1/2 tsp of hot chilli powder or Tabasco
1 tsp sweet chilli sauce
Chopped basil or coriander, to garnish.
Method
- To make the dressing, mix together the mayonnaise, fish sauce, lime juice, chilli powder (or Tabasco) and chilli sauce.
- Toss the shredded cabbage or iceberg lettuce in the sauce. Divide this into 2 serving glasses.
- Arrange the prawns on top and garnish with chopped basil or coriander and a squeeze of lime juice.
