Puffy Apple Omelet
Makes 2 servings

INGREDIENTS
3 TBsp AP flour
1/4 tsp baking powder
1/8 tsp salt
2 eggs, separated
3 TBsp milk
3 TBsp sugar
1 TBsp lemon juice

Topping:
1 large tart apple, thinly sliced
1 tsp sugar
1/4 tsp ground cinnamon

DIRECTIONS
Preheat oven to 375F.
In a small bowl, combine flour, baking powder, and salt; mix well. Add egg yolks and milk; mix well and set aside.
In a small mixing bowl, beat egg whites until foamy. Gradually add sugar, beating until stiff peaks form. Fold into yolk mixture, add lemon juice.
Pour into a greased 1-1/2-quart shallow baking dish. Arrange apple slices on top. Combine sugar and cinnamon and sprinkle over all.
Bake, uncovered, for 18-20 minutes or until a knife inserted near the center comes out clean. Serve immediately.
