Not very exciting to look at, but pulled pork can be used in sandwiches or tacos. This was cooked in an Instant Pot which, despite the name, took about an hour from start to finish.
Ingredients
Spice Rub
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 tablespoon chili powder
1 tablespoon cumin seeds
2 teaspoons garlic powder
2 teaspoons dried onion
1 teaspoon cayenne pepper powder
Remaining Ingredients
3 pounds pork tenderloin, trimmed of any visible fat
2 tablespoons oil
1 onion, roughly chopped
1 cup chicken stock
1 cup barbecue sauce (I used cherry barbecue sauce that I made previously)
1/2 cup apple cider vinegar
2 tablespoons brown sugar
4 garlic cloves, grated
Directions
1. Cut pork into 2 inch (5 cm) chunks. Blend spice rub ingredients together.
2. Press spice rub into every surface of the pork. Place in sealed container or bag and refrigerate for at least 1 hour.
3. Heat onion chunks in a pan with oil for about 5 minutes, then set aside. Sear pork in the same pan just long enough to brown on all sides, but no longer.
4. Blend Remaining Ingredients, minus the pork, together in the Instant Pot. Place the lower rack in the bottom of the pot. Arrange half of the pork in the pot, then layer half of the onion. Add remaining pork and remaining onion.
5. Seal Instant Pot and set the valve to Seal. Cook on High for 45 minutes. Allow the pressure to fully leave the pressure cooker before opening.
6. Remove pork from pressure cooker. Shred pork chunks by using two forks until totally shredded. Use pulled pork in sandwiches or tacos.
