Quinoa, Beef and Bean Wrap:
Ingredients:
1) Quinoa, black - 1/4 cup
2) Beef strips - 4 Oz.
3) Beans, black - 1/4 cup dry
4) Anaheim pepper - 1
5) Onion - 2 slices
5) Tomato, Roma - 1
6) Spinach, baby - 1/2 cup
7) Cheese, blend - 1/4 cup
8) Black pepper - 2 tspns.
9) Tortillas, 16" - 2
10) Horse radish - 2 to 4 tblspns.
Procedure:
1) Wash and rinse the quinoa.
2) Boil the quinoa in twice as much water.
3) Lower the heat and cover to allow the quinoa to steam and puff.
4) Set aside and allow to cool.
5) Boil the black beans until soft.
6) Set aside and allow to cool.
7) Pan fry the beef strips until done.
8) Set aside and allow to cool.
9) Julienne cut the Anaheim pepper, beef, onion and tomato.
10) Spread horse radish in the middle of each tortilla.
11) Lay spinach on each tortilla.
12) Cover with Anaheim pepper, onion and tomato.
13) Sprinkle black pepper.
14) Add quinoa.
15) Add black beans.
16) Add beef strips.
17) Cover with shredded cheese.
18) Roll the wraps as if making a burrito.
19) Cut each wrap in half.
20) Place on a plate and serve cold.
