Never eaten asparagus raw until today. I peeled the asparagus and somehow forgot to cook it. I slathered it with a lemon aioli and dug in. Crumchy and very good. Ever try it?

Do you shave the tough ends with a vegetable peeler to get to the more tender insides? Chef Jacques gave that tip long, long ago.We often snack on the snapped off ends and noble until it's too tough to eat.
Plus we serve them raw on salad as well.
