This is my favourite way of preparing rhubarb and my mouth is watering as I think about how I make it.

Ingredients
Filling

2 sticks of rhubarb, washed and chopped into bitesized pieces
2 small or 1 large pear, peeled and chopped
Half an inch of ginger root, peeled and grated
Sugar to taste
Topping
8 oz plain flour
4 oz magarine
2 oz uncooked rolled oats
3 oz brown sugar

Method
  • Place rhubarb, pear, ginger and sugar into a deep pie dish and mix.
  • Prepare the crumble topping by rubbing the fat and flour together until they resemble breadcrumbs, then stir in the oats and sugar.
  • Pour the topping over the fruit mixture and press firmly.
  • Bake for 30 minutes at 180°C
Serve with custard, cream or ice cream as preferred.

My favourite accompaniment is ginger ice cream.
