Recipe Rice with Chorizo and Sofrito

A tour of the pantry resulted in this dish which I view as successful and worth posting. It is loaded with latino ingredients. Chorizo is a sausage made in Spain that looks like Italian sausage but has a different flavor. It should not be confused with Mexican chorizo which is a red paste and not a substitute for Spanish chorizo. The recipe includes black turtle beans and sofrito (the Spanish trilogy of onion, bell pepper and garlic.) It worked out well and I recommend making a batch for your diners.

Ingredients
1lb Spanish chorizo sliced into 1/2" medallions (I also remove the casing out of preference.)
1 cup uncooked long grain rice
1 large can black turtle beans drained and rinsed
1 medium onion chopped
1 bell pepper chopped
4 cloves garlic minced or pressed
2 tomatoes chopped
1 1/2 cups chicken stock
1/2 cup white wine.
1 tsp cumin
1/2 tsp chili powder
Salt and pepper to taste
Directions
Brown the sausage in an oiled large tall skillet or dutch oven. Cook for about two minutes. Add all the other ingredients, cover, bring to a boil and then simmer until the rice is cooked. A simple and tasty one pot meal.
