Recipe Salsa verde (Mexican Green sauce)

Ingredients:
3-4 tomatillos
1 medium white onion, peeled
a handful of coriander, stalks and all
2-3 jalapeños or, if you like it hotter, serranos, stalks removed.

Method:
  • Place the whole ingredients into a pan and barely cover with water. Bring to a boil, then cook on medium-high until the tomatillos change colour (they'll go a dull green) - about 15-20 minutes.
  • Remove the tomatillos, onion, chiles and coriander with a slotted spoon. Keep the cooking liquid.
  • Blend the vegetables with enough cooking liquid to make a thin sauce. That's it!
