I make corn and bacon (mixed into batter) waffles. Serve them with butter/syrup/fruit/sour cream/sometimes meat on the side. Whatever person wants. DD’s would occasionally use leftover waffles for PB&J sandwiches.
I'd say waflles and PB&J sandwiches sound just fine. As long as she doesn't put bacon and sausage on them too!

My FIL likes peanut butter and bacon sandwiches with mayonnaise, too. Yuck.

Sometimes. They have maple flavored sausage here also.

Reflecting on that, however: I'm a huge fan of Chinese sweet and sour prawns.
Venezuelans love cachapas (which are ground sweetcorn pancakes) with salty cheese and, occasionally, pulled pork.
Brits truly believe the only way with roast pork is apple sauce.
Sicilians use an agrodolce (sweet & sour) sauce on steak.
And in Indonesia and Thailand, fish sauce is often combined with palm sugar.

Are the cachapas made with regular corn flour or is it processed in some way before use?

Cachapas are made with fresh corn. Remove the corn from the cob, then blend to a thick batter and cook gently on a griddle.
Typically, they're filled with a soft white cheese called queso guayanés or queso telita. There's usually a couple of tablespoons of flour in the mixture, just to keep the batter together.
