I used a mix of butter and grapeseed oil in the pan to cook the omelet and keep it from sticking.

I know you're joking, but it's already got spinach in it. I don't like salami and didn't have any ham, peppers, leeks (it already had onion anyway) or provolone. I don't think potatoes or tomatoes would work well and I did have scallops on hand but don't think they go well with sausage.

I had made another batch of these puppies, froze them, pulled one out this morning and followed the re-heat directions in the micro - meh - nope! So much better defrosted and then toasted in the AF!!
