I don't make (or eat) breakfast that often; perhaps once every other Saturday or so, but here are some recent ones.

Green Eggs & Ham (...Sam I am.)

Eggs Benedict for the missus one morning.

Swiss Potato Rösti. (My first go at this. Very good, but I learned a few things for the next one!)

Smoked brisket hash with a ton of onions, sliced potatoes, bacon, plus rosemary and thyme, and salt and pepper; all cooked in bacon grease maximum coronary effect, lol.

PAcanis DH is from PA!!
I'd never heard of the stuff before he took me "Back East" for the first time to meet his family and brought some back with us, frozen and well wrapped, back to Hawaii, where we were living at the time.
Made Sunday Brunch for us two as well as my Mother & Father. Dad says, "hmmm, tastes like Spam, so what's the big deal about this stuff?"
DH blew a gasket!!! (sshhhh, I thought that same).

Barriehie and PAcanis I find Taylor's Ham aka Taylor Pork Roll as some others here have called it, at out local Krogers aka Fry's as well as at Sprout's. I keep maybe three or four the deep freeze at all times.
DH just reminded me that when we lived in Southern Arizona I bought Taylor's Ham at Bashas' ... ever since we moved to the "Mainland" we've been able to get HIS faves, mine, well I gotta hunt, but we get by.
