and that is all that came out of a 2 kilo ( 4.4llb) piece!

Of course a fair amount came out in the frying but not too much. It was the perfect amount of crispy fat 👌 🤩

I'm a sucker for anything new in a supermarket.
Venezuela has dozens of different cheeses; but they're all white. Some are really good, (and others, IMHO, are just boring) but I long for a decent camembert/brie, a sharp Cheddar, a spicy Stilton. Nothing going.
 
The piece of pork belly I bought with the intention of making bacon never happened and late in the evening on Monday I was looking at an expensive piece of meat in that annoying state of ‘cook me now or I’ll end up in the bin’
As I was away the next day I threw it in the slow cooker in a brine (sugar, soy sauce, a splash of water) with a fair amount of flavourings and left it to cook overnight.
Then chilled it, and today sliced it a shallow fried it.

Very little, just enough to cover the bottom of the slow cooker by about half a centimetre and I sploshed some of that over the top and sprinkled spices over that.

I have a vent hole in the lid of my large slow cooker so I blocked it with a piece of kitchen towel to make sure there was no evaporation.

It’s important to get a thick piece of belly pork, yesterday I did a thin piece (thats all the butcher had) and it’s nowhere near as nice.
