This makes right around 7 servings but it's scalable for however much you need.
Ingredients
Method
Even though they're already cooked when purchased I still pressure cook on high the turkey legs for 40 minutes so they're falling apart tender.
Start the butter melting and dice your onion to go in the pot first. Cube your potatoes and add to the onion also adding some water so the potatoes cook. Dice the chili's and in the pot. Chunk the turkey meat and in the pot. As you stir the turkey chunks will break up a bit and the potatoes will start getting rounded edges. Season as you like. I leave enough water in there that when it's done you've got a sauce in the pot. The potatoes contribute to its not being watery.
