Ingredients:

500 gms Italian spaghetti
1-2 heads of garlic, cloves separated, peeled and cut into thick slices
Olive oil
Sprigs of parsley, finely chopped (optional)
Peperoncini, crushed (optional)
Parmesan cheese for topping
Method:

Method:
- Fill a large pan with water, add salt and bring to a boil
- Cook the spaghetti until al dente (this brand took 10 minutes)
- While the pasta is cooking, heat plenty of olive oil (I used EVOO, because that's all I find over here) in a frying pan over medium heat.
- Add the garlic (and the peperoncini, if using) and poach gently until the garlic begins to brown around the edges.
- Drain the pasta and return to the pan immediately, pouring the garlic/oil mixture on top. Add the parsley (optional) and serve with freshly grated Parmesan.
