SPAM® BBQ Sliders with Grilled Onions and Pineapple

Ingredients


1 - 12OZCan of SPAM (I used reduced sodium SPAM)
1 - Small White Onion, Sliced 1/4 inch Thick
1 - Can Sliced Pineapple (use fresh if you want to, and can get it)
1/4 Cup of Your Favorite BBQ Sauce (I used Stubb's Sweet Heat (a Texas brand that I really like)
1 Package King's Hawaiian Slider rolls.
Avocado Oil (substitute olive oil)

Steps

Mise en Place, of course.

Heat a large pan/skillet or griddle to medium high. Pour oil into skillet. The oil shimmers, ad your onion slices and brown on both sides. Move onions to paper towel to drain off excess oil.

Toast your slider rolls on the inside. Set aside. Place onions on bottom rolls.

Fry your SPAM in the same pan until light brown. Flip spam, and coat top side with BBQ Sauce while bottom side browns. Flip again, and repeat. When both sides have been browned, sauced and caramelized, place SPAM slices on top of onions.

Drop sliced pineapple (cut down to slider size -- squared off is fine) into hot pan, and caramelize the sugars in the pineapple until lightly browned.

Place pineapple slices on top of SPAM, and top off with Slider roll top.

Layers from bottom to top are Bottom Roll, Grilled Onion slice, SPAM, Pineapple slice, Top Bun.
