Recipe Spicy Apple Relish

Spicy Apple Relish
Makes 20 2-TBsp servings

INGREDIENTS
6 cups peeled, cored, sliced apples (Gala, Empire, Jonagold, or Fuji)
Juice of 1 lemon
2 cups brown sugar, firmly packed
1 large sweet onion, peeled and thinly sliced
2 medium jalapeño peppers, seeded and diced
1/2 sweet red pepper, julienned
1 large yellow bell pepper, julienned
1-2 cloves garlic, crushed
1 TBsp mustard seed
2 TBsp peeled and julienned fresh ginger
1/2 tsp curry powder
1-1/2 tsp total allspice and/or clove and/or nutmeg
1 tsp kosher salt
2 cups apple cider vinegar
1/4 tsp cayenne pepper
Apple juice or apple cider, as needed, if cooking pot begins to dry

DIRECTIONS
Julienne apples. Toss with lemon juice. Refrigerate until ready to use.
In a large stockpot, add each ingredient, stirring fully between additions. Add apples last. Simmer over medium heat for 60-70 minutes, stirring periodically. Do not let liquid dry up. If liquid is cooking off too quickly, add 1/4 cup apple juice or cider as needed until the mixture has reached the desired consistency.
