We bought lobsters last Sunday in the Sunday market. We were actually looking for prawns but a kilo costs 680 pesos so we settled for lobsters at 550 pesos per kilo. We got big 8 lobsters for 1.5 kilos for about $20 in all. So here is how we cooked it.

Ingredients: fresh lobsters, 2 grated coconut, some pieces of red pepper (we harvested this from our backyard)

Procedure: Add 5 cups of water to the grated coconut and press with the hand to extract the coconut milk. Pour the coconut milk into a pot and let it boil for 15 to 20 minutes or until the liquid is not very white and some solids are appearing. Add the lobsters and continue boiling for 20 minutes. Add the red pepper after turning off the stove.

Best served with a dip of lemon butter and steamed rice.
