Sundried Tomato Vinaigrette
Makes a little over 1 cup of dressing
Ingredients
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
1/4 cup sun-dried tomatoes in olive oil, roughly chopped
2 cloves garlic, roughly chopped
1 1/2 TB honey
1 tsp dried oregano
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 cup water, divided
Directions
Chuck half the water along with everything else in the container of a stick blender. Give it a good whizz, and add more of the reserved water, a tablespoon at a time, until you reach the consistency you like.
