Sunny Almond Cake

My cake contains both lemon and orange and gets a twist from crème fraîche or smetana (sour cream).
Preparation time: 1,5 hours
Serves 6-8

Ingredients

2 tablespoons of butter & 0,5 dl breadcrumbs or crushed almonds

3 dl sugar
4 egg yolks

3 dl plain flour
0,5 dl graham flour
1 dl almond powder
1,5 teaspoons baking powder
1 teaspoon baking soda
zest of one lemon
zest of one orange
200 g melted, cooled butter

4 egg whites
---
0,5 dl crème fraîche/smetana
juice of one lemon
juice of one orange

2 tablespoons almond flakes

Instructions

Grease the cake tin (I normally use a straight-edged, flat cake pan, about 26 cm) and line it with breadcrumbs/crushed almonds. Froth the sugar and egg yolks. Add the mixed dry ingredients, citrus zests and butter in calm movements. Beat the egg whites into a hard foam and turn the foam, crème fraîche and citrus juices carefully into the mixture. Pour into the cake pan. Scatter almond flakes on top and bake in the oven (175°C/350°F) for 50-60 minutes. Try with a stick to see if the cake is done. Serve with e.g. raspberry jam, ice cream or lemon curd seasoned with nutmeg.
