The CookingBites recipe challenge: cauliflower/broccoli

Years ago I used to eat these broccoli fritter things in an old favorite restaurant of mine, Harry T's, back when it was part of the Destin (Florida) Yacht Club. They had both indoor and outdoor seating overlooking the Destin Harbor with fantastic views. It was a great place to watch the sunset and eat. These fritter appetizers were downright delicious and although I don't have a recipe, I remember how they tasted and I think I can copycat it. It was broccoli, cheddar cheese, onion, and bacon rolled up into a ball, breaded, and deep fried. They served it with honey mustard. I'll get around it it probably next week some time.

Super simple and extremely customizable.
I've made this dish using Chicken as well

Ok, here’s my first one:

Recipe - Broccoli Salad

This is another one of those that pops up at every cookout, family gathering, potluck, and church supper.

Usually it’s made with raisins, but I chose dried cranberries this time around to “upscale” it a little bit, and that worked well, I think.

This particular recipe, the dressing is very light - usually (around here, anyway), the dressing is glopped on thick and creamy, so this would likely appeal to those who like a less heavy dressing.

Here's my first entry: Broccoli Paneer
I bought a lovely head of broccoli yesterday with the intention of making something totally different. Then, today, I looked at it and thought "that's not enough", so I decided to make this instead.
Broccoli is not an Indian vegetable, although, from what I understand, it can be found in upmarket stores
I combined it with paneer to add some protein and colour. Mango powder (amchoor) is typically used to add tartness to a dish, and it works really well here. You could happily use lemon or lime juice.
