Third (and probably final) entry from me: Zucchini fritters

Here's another one from me: Zucchini en carroza
The "classic" Italian dish is melanzane (aubergine/eggplant) en carroza, but this is an interesting variation. It's best to use small courgettes/zucchini for this, because, imho, they're tastier.
In the 2nd photo, you'll see my sous chef ensuring that the crusts do not go to waste. The photo looks out of focus because the tail-wagging moved his entire frame.

Down to the last hours of the zucchini challenge - 8 creative cooks who between them have offered 17 delicious dishes…can we get to an even 20? Maybe so!

I have one more done but have now sourced some courgette flowers! Is there a teeny chance of a few days extension The Late Night Gourmet? If not I will make something with them anyway and post later.
 
I know The Late Night Gourmet has his hands full right now, so I’m going to go ahead and ok an extension out through Sunday midnight UK time on his behalf. I don’t think he’d mind.

Let’s see a few more courgette creations!
