Welcome to the CookingBites recipe challenge. The current challenge ingredient is herbs* (fresh or dried) and karadekoolaid is our judge. To enter, all you need to do is post a recipe which contains herbs tag it cookingbites recipe challenge, and post a link to it in this thread. The winner becomes the judge for the next challenge. Deadline: midnight, end of day, Saturday 7th June, UK time (GMT). Detailed challenge rules can be found here.

*for the purposes of this challenge herbs are defined as the stems, leaves and flowers of aromatic plants. This includes garlic shoots, Chinese garlic chives and spring onion (green onion/scallion) leaves.

Stuffing Casserole Ala Grandma Eva

I make this side dish often!
This is a different twist on a stuffing/filling/dressing, paying homage to my Portuguese Grandmother.
My family doesn't care for mushy-wet bread, as placing the stuffing into the carcass of poultry can do.
My Paternal-Grandmother wasn’t too much in to cooking, but man, she made a kick-butt Stuffing Casserole. She ordered her Turkey for the Holidays from a local restaurant, already roasted, so she would make her own Stuffing in a very large Casserole dish, that she baked-off in the oven.

I forgot to mention that my Mother, who now lives in a Senior Living Community a good half hour drive away from us, requests this ☝️ Stuffin' Muffin maybe 2-3 times a year for her freezer. This ☝️ version of Stuffing/Filling/Dressing is really a complete breakfast with the egg on top! Hmmm 🤔 maybe even a little dash of Sriracha over the egg?
 
Is cardamom an herb?
No, it's a spice. Off the top of my head, in 30 seconds, I'll give you a list (incomplete) of all the herbs I know:
Basil, oregano, parsley, coriander/cilantro, sage, thyme, rosemary, dill, chives, epazote, borage, mint, peppermint, lemon verbena, savory, lavender, ... and many more!
 
Asking the big questions: do you say 'Herb' or 'Erb'?
'Erb' is the American pronunciation. Presumably derived from the French. Except in France it is pronounced 'airb' and always follows a consonant. So it's 'les herbes' (with the s sounded) for plural or 'une

To my UK ear 'erb sounds odd and awkward.

Traditionally here (as MG pointed out), it’s “‘erb,” so that’s how I say it.

I will mention it’s become one of those “I’m better/smarter than you” indicators here, as “herb” shows up more and more in cooking shows, shows about cooking, and restaurants trying to pass themselves off as fancy/posh.
