So here's my one and only entry: Kashmiri Rogan Josh . Simply because I don't eat lamb, neither does anyone in my family, but I've prepared this dish for dinners.
This is a classic dish from Kashmir. Rogan means fat, or oil and josh is basically a stew, or a method of braising: so we have a "fatty stew", perfect for those freezing mountainside winters.
This dish is a first on Cooking Bites, in that it's a surrogate dish; my only contribution is the recipe, but Morning Glory prepared the dish, tasted, critiqued and took some magnificent photos.
