For some reason or another, I recalled a visit to a Greek bakery in Maidstone, back in 2023. Apart from the delicious Greek coffee, they also had a dazzling array of pastries, both sweet and savoury. This leek pie was lunch for a day or two.
The original recipe does not include spinach, but I decided to put some in for contrast.
